Rotisserie Chicken Almond Stir-Fry Recipe

Makes 4 servings | Gluten-free and dairy-free

Step 1

1 Tbsp. coconut oil
1 c. red bell pepper – chopped
4 c. broccoli – cut into small pieces
1 c. celery – chopped
1 c. fresh snow peas – chopped
1 Tbsp. Bragg® Liquid Aminos

Step 2

2 c. brown rice – cooked
5 c. cooked rotisserie chicken – cut up

Step 3

4 eggs – beaten
1 Tbsp. coconut oil

Step 4

2-3 Tbsp. Bragg Liquid Aminos
¼ tsp. crushed red pepper (optional)

Step 5

½ c. slivered almonds

Directions

  1. Sauté ingredients from Step 1 until tender.
  2. Add ingredients from Step 2 to vegetables and cook an additional 2 minutes.
  3. In a separate pan, scramble eggs in oil until thickened, but still moist. Add eggs to chicken, rice, and vegetables.
  4. Add Bragg Liquid Aminos to egg, chicken, rice, and vegetable mixture.
  5. Sprinkle almonds on each serving.
