We’re thrilled to introduce Nutritional Weight & Wellness nutritionist, Shelby Hummel. We hardly let Shelby get settled before throwing our next round of 5 Questions to her. Her answers prove she’s the perfect addition to our growing team!

What’s your go to, make-ahead meal?

My make-ahead meal would either be a dairy free, gluten free quiche in muffin tins for quick meals, or salmon cakes, which Imake the about once a week! Bonus, the salmon cakes are delicious for breakfast too.

What inspired you to pursue a career in nutrition?

I was motivated to pursue nutrition when I realized how many children and young adults struggle with nutrition and basic kitchen skills. Often they are overfed processed foods and still malnourished. I think this is translating to increased learning problems and emotional problems, and I wanted to help. I’m thrilled to be doing that here at Nutritional Weight & Wellness.

What’s your favorite meal of the day? Why?

Dinner is often my favorite meal of the day because that is when my significant other and I spend time in the kitchen to test out new recipes together. Plus, we love to host family and friends for dinner parties! Last week we were craving summer flavors, so we served the Nutritional Weight & Wellness Cabbage Slaw during a dinner party. It was simple, fresh and delicious, and I think the leftovers tasted even better! 

What’s for lunch today?

Lunch today is my favorite quick meal, chicken salad (from leftover chicken) scooped in one-half an avocado "cup" with a side of fresh blueberries. It’s a fast, balanced and tasty lunch.

What advice would you give to someone whose family or friends don’t eat the Weight & Wellness Way? It can often be lonely and hard to keep yourself motivated.

My advice for them would be two-fold:

  1. Know the "why" behind the "what." When we have established why a certain behavior/change (the what) is important to us, we are more likely to feel empowered to stick with it. For instance, my affirmation is—I nourish my body with real foods because they help me better manage my stress and anxiety.
  2. Lead by example. Many people around you will see how great you feel and will want to know your "secret." We can't force our family or friends to eat better, but we can be there to support them when they are ready to make a change!
